The most fervent of these were the Eight Chefs, but in general those that follow the culinary path in the Backstreets there have found that to excel further in their field, they have to use ingredients the normal mind wouldn't see as potential main dish material.
Like humans, for example. The more alive the better -- they found that certain um, proteins and stuff broke down after death and could change the flavor they were seeking.
